How to cook Pork Tenderloin

What is Pork Tenderloin? That was what I was asking when I found it at Sams.  It is a long, thick, portion of pork.  On my first attempt I looked up recipes online and ended up over cooking it. It was tough and hard to chew.  After talking to my mother-in-law, I learned that pork tenderloin can be a tender and tasty meat.
Recipe: 1 pork tenderloin, cavendars seasoning, a  baking dish.  Preheat the oven to 400 degrees.  Cover the pork tenderloin liberally with cavendars seasoning. Place the tenderloin in a baking dish and cook for about 40 minutes or until the meat reaches 150 degrees.

Last weekend we went to John's friend James and got to she his little girl celebrate her first birthday.  There is something so adorable about a little kid smearing cake all over their face.  This week was monumental for me-I officially applied to the bar.  I also bought my graduation gown, hood, and tam.  I  went to court for the first time representing a client in a criminal matter before a judge this last week.  What an adrenaline rush.  I have to tell you that it is really exciting and scary all rolled up in one.  I think I can get used to this.

February

I cannot believe I let February pass by without blogging once.  February started with.. more snow.  John's sister stayed with us one weekend and we got snowed in.  We also did not have to go to work for almost a week-yeah.  February was a hard month on John.  He went to the doctor and got placed on a strict diet.  Since then we have had to eliminate a lot of our normal foods and learn how to eat without sugar, carbs, and anything fattening.  I have to say some of it is not bad, but I do not know if I will ever get used to splenda. I have since learned how to roast veggies and how to season meats so they taste good on their own.   In all he has over 15 pounds in the last month, not too shabby.  John also went on a boys scout freeze out campout-how ironic since it was 60 degrees outside. As for me, well I have been doing a lot of work.  I went filed my first court documents, and actually appeared before a judge representing a client for the first time. There is so much I have to learn about writing documents and communicating with clients.
