Sweet Potato Fries

I tried out this great recipe from the biggest loser cookbook and I love it.  John did not like it as much as I did but I could not stop eating. 
Sweet Potato Fries
2pds sweet potatoes
1 1/2 tbs minced garlic
1 1/2 tsp dried rosemary (I just used Italian seasoning)
2 tsp virgin olive oil
 1/4 tsp salt

Preheat the oven to 400 degrees.  Peel, and cut up the sweet potatoes into steak potato slices.  In a bowl mix the garlic, rosemary, olive oil, and salt.  Add the sweet potatoes into the bowl mixture and coat the potatoes with the mixture.  Spray a baking sheet with non-stick spray then arrange the potatoes on the sheet in a single layer.  Bake for about 25-30 min or until tender.

Our family birthdays, holidays, and special days growing up always consisted of a marvelous breakfast of crepes. If you have never had crepes they are like thin sweeter pancakes that you fill and roll up like a burrito.  My mom would fill the crepes up with jelly, fresh fruit, and ice cream while topping it with chocolate sauce and whipped cream.  I still love crepes and have taught John how to make them.  Here is a great recipe for crepes:

Makes apprx. Six Crepes
Ingredients:
Crepe;
1/2 cup flour
1/2 cup milk
1/4 warm water
2 large eggs
2 tblsp melted butter
1 1/2 tblsp sugar
dash of salt
 
Mix all the ingredients in a blender and let it sit covered for about 30 minutes in the fridge.  Take batter and pour into the middle of a greased non-stick pan (smallest will work best) over medium heat.  Pour about 1/4 cup at a time.  Rotate the pan so that the dough spreads out thin and even over the bottom of the pan.  Once solid, and golden on the bottom, flip.Let cook for another minute or so, and remove.  Fill and top with whatever sounds delicious to you.

Today I was feeling like I needed to make something chocolate, and have I found the recipe for that. This recipe is called fudgy buttons and is really quick and easy to make.  I believe it took me about 10 min to make.  They are really sweet so don't eat too much. Easy Cobbler

I know there are a lot of options when it comes to cobbler. Here is a recipe from John's mom that we love to use because it is so easy.
Ingredients: 1/2 cup of butter, 1 cup of milk, 1 cup of sugar, 1 cup of flour, a can of any fruit filling.

Directions:  Melt the butter and pour in a deep baking dish. Mix sugar and flour in bowl, add milk.  Add this mixture on top of the butter in the baking dish. Bake 10 minutes at 350 degrees.  Take out and pour the fruit filling mix into the center of the baking dish. Bake until solid, usually takes about 25-30 minutes depending on stove.  Sprinkle cinnamon sugar on the top afterward.  Serve with cold vanilla ice cream.

Chocolate Gravy

I have decided that I will post some of John and mines favorite recipes. If I am really good John will make me chocolate gravy for breakfast. Since John cooks this without a recipe from memory and it does not really have measurements like all southern cooking, I have found a good site that lists how to make it: chocolate gravy.
